Description

This Vegan Tater Tot Casserole is a hearty and comforting plant-based dish featuring Impossible ground beef, cremini mushrooms, vegetables, and creamy coconut milk sauce, topped with vegan cheddar cheese and crispy tater tots. Perfect as a main course for vegan or vegetarian dinners.

Ingredients

Scale

Main Ingredients

  • 12 ounce package Impossible ground beef
  • 8 ounces cremini mushrooms, sliced or chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • Salt and black pepper, to taste
  • 2 tablespoons all purpose flour or gluten free flour
  • 13.5 ounce can light coconut milk
  • 1 tablespoon vegan Worcestershire sauce
  • 1 1/2 cups frozen corn or canned corn
  • 1 1/2 cups frozen green beans or fresh/canned green beans
  • 2 cups vegan cheddar cheese shreds
  • 32 ounce bag tater tots

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 400 degrees F and lightly grease a 9×13 inch casserole dish to prevent sticking.
  2. Cook Vegan Meat: In a pan over medium-high heat, cook the Impossible ground beef, breaking it up with a spatula, until fully browned and cooked through.
  3. Sauté Mushrooms: Add sliced mushrooms to the pan and sauté, stirring constantly, for about 5 minutes until they soften and release moisture.
  4. Add Spices: Stir in ground cumin, oregano, salt, and black pepper to taste to enhance the flavor of the mixture.
  5. Create Sauce Base: Sprinkle the flour over the cooked mixture and stir well. Slowly pour in the light coconut milk while stirring to avoid lumps, then add vegan Worcestershire sauce, corn, and green beans. Stir to combine.
  6. Simmer Mixture: Allow the mixture to simmer gently for 5 minutes so it thickens and flavors meld.
  7. Assemble Casserole: Transfer the vegetable and meat mixture to the prepared casserole dish. Spread vegan cheddar cheese shreds evenly on top, then arrange tater tots over the cheese layer.
  8. Bake: Bake uncovered in the preheated oven for 40 minutes until the tater tots are golden brown and crispy on top.
  9. Serve: Remove from oven and serve immediately while hot and bubbly. Enjoy your vegan comfort meal!

Notes

  • Use any vegan ground beef alternative if Impossible brand is unavailable, such as Beyond, Gardein, or TVP (which requires soaking and extra seasoning).
  • For cheese, use your favorite non-dairy cheddar or stretchy vegan mozzarella for variation.
  • If coconut milk is unavailable, substitute unsweetened vegan creamer or another plant milk for a lighter sauce.
  • Try sweet potato tots instead of regular tater tots for a seasonal twist, especially during holidays like Thanksgiving.
  • Leftovers keep well refrigerated for up to 4 days and can be reheated in the microwave or oven.
  • You can freeze the casserole before baking; bake from frozen until hot and cooked through.
