Description

Delicious vegan sausage rolls made with Impossible sausage crumbles and flaky vegan puff pastry. Perfectly golden and puffed, these rolls make a great snack or appetizer and can be easily frozen and reheated.

  • 2 sheets frozen vegan puff pastry

Filling

  • 14 ounces Impossible vegan sausage crumbles
  • 1/2 cup vegan breadcrumbs (panko recommended)
  • Few tablespoons water
  • 2 tablespoons melted vegan butter (for brushing)


Instructions

  1. Thaw Pastry: Set the frozen puff pastry out to thaw on a lightly floured surface for about 30 minutes until pliable.
  2. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
  3. Prepare Filling: In a large bowl, combine the Impossible sausage crumbles with the vegan breadcrumbs until thoroughly mixed.
  4. Cut Pastry: Roll out one sheet of puff pastry gently and cut it into 3 long rectangles using a pizza cutter. Repeat for the second sheet to have 6 rectangles total.
  5. Fill Pastry: Divide the sausage mixture into 6 portions. Place each portion in the center of each pastry piece, leaving space on the sides and ends.
  6. Seal Rolls: Bring the sides of the pastry over the filling and pinch to seal, using a little water to help stick the edges together. Repeat with all pieces.
  7. Cut Rolls: Using a large knife, cut the sealed pastry into 2-inch long pieces and place them spaced apart on the lined baking sheet. Cut a few slits on top of each for venting.
  8. Brush and Bake: Brush the tops with melted vegan butter and bake in the oven for 20 minutes until the pastry is puffed and golden brown.
  9. Serve: Remove from the oven and serve immediately while warm and delicious.

Notes

  • These sausage rolls freeze well after cooling; place in a freezer bag or container.
  • Reheat frozen rolls in the oven or air fryer at 425 degrees Fahrenheit until warm.
  • If Impossible sausage is unavailable, substitute with any vegan sausage crumbles or homemade tempeh sausage crumbles.
