- 1/4 cup olive oil
- 1 large sweet onion, chopped
- 1 bag Gardein beefless tips
- 3 large garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 2 cups Guinness stout
- 3 cups vegetable broth
- 3 tablespoons tomato paste
- 1 tablespoon vegan Worcestershire sauce
- 4 carrots, peeled and cut into chunks
- 4 yukon gold potatoes, peeled and cut into chunks
- 1/4 cup cornstarch
- 1/2 cup water
Instructions
- Heat olive oil: In a large pot, heat the olive oil over medium heat.
- Sauté onions: Add the chopped onion and sauté for 5 minutes until translucent.
- Cook beefless tips: Add the Gardein beefless tips to the pot and sauté for 4 minutes until slightly browned.
- Add garlic: Stir in the minced garlic and cook for 1 additional minute.
- Season and stir: Add dried rosemary, thyme, and ground black pepper. Cook for 1 minute while stirring constantly.
- Add liquids: Pour in the Guinness stout and stir well.
- Add broth and flavorings: Add the vegetable broth, tomato paste, and vegan Worcestershire sauce. Stir to combine.
- Add vegetables: Add carrots and potatoes to the pot, stir thoroughly.
- Simmer the stew: Bring the stew to a boil, then reduce heat to a low simmer. Cover and cook for 30 minutes, stirring occasionally.
- Make slurry: In a small bowl, mix cornstarch and water to create a slurry.
- Thicken stew: Slowly add the slurry to the pot while stirring until the stew thickens to desired consistency.
- Season and serve: Taste and add salt if needed. Serve hot, optionally with crusty bread and chopped parsley.
Notes
- Substitute Gardein beefless tips with TVP chunks, mushrooms, lentils, or beans using 2-3 cups in place of the beefless tips.
- If Guinness stout is unavailable or undesired, replace with extra vegetable broth or alcohol-free beer, keeping in mind the flavor will differ.
- Leftovers can be refrigerated for up to 4 days or frozen for longer storage.
- Adjust seasoning after thickening as saltiness varies based on the broth used.
