Description

A quick and easy creamy vegan cilantro lime noodles recipe made with a luscious cashew-based sauce, bright lime, and fresh cilantro, tossed with tofu shirataki or thin rice noodles for a healthy and flavorful meal.

Sauce

  • 1 cup raw cashews, soaked or boiled if not using a high-speed blender
  • ½ cup packed fresh cilantro (about a small handful)
  • ¾ cup water
  • 2 cloves garlic
  • 1 lime, zested and juiced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Noodles

  • 2 packages Tofu Shirataki Spaghetti Shaped Noodles (or substitute thin rice noodles)


Instructions

  1. Prepare the sauce: Add the soaked or boiled cashews, cilantro, water, garlic, lime zest, lime juice, salt, and black pepper to a blender. Blend everything until smooth and creamy, ensuring the cashews are fully processed for a silky sauce.
  2. Cook the noodles: Follow the package directions for the Tofu Shirataki noodles. Generally, this involves rinsing and boiling or microwaving to remove excess moisture and odor. Drain well and return the noodles to the pot.
  3. Combine and heat: Pour the creamy cilantro lime sauce over the drained noodles and toss well to coat evenly. Place the pot over low heat and gently heat the noodles and sauce mixture for 1 to 2 minutes, stirring frequently until the sauce thickens slightly and everything is heated through.
  4. Serve: Remove from heat and serve immediately for a fresh, creamy vegan noodle dish.

Notes

  • If you do not have a high-speed blender like a Blendtec or Vitamix, soak or boil the cashews first for optimal creaminess and easier blending.
  • To soak cashews: cover with water and soak for 6 hours or overnight, then drain before using.
  • To boil cashews: boil them in water for 10 to 15 minutes until very tender, then drain before blending.
  • You can substitute thin rice noodles if you prefer or cannot find tofu shirataki noodles.
  • Adjust salt and lime juice to taste for extra brightness.
