Ingredients

Scale

Filling

  • 1 lbs. taco meat
  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes
  • 50 scoop chips

Instructions

  1. Prepare Taco Meat: Use your preferred taco meat recipe or the crunch wraps meat recipe to cook and season 1 pound of taco meat thoroughly.
  2. Prep Veggies and Cheese: Shred 2 cups of iceberg lettuce and ½ cup of cheddar cheese. Slice 25 mini cherry tomatoes in half.
  3. Prepare Sour Cream Piping Bag: Place ½ cup of sour cream into a sandwich bag, cut a small corner off to create a piping bag for easy application.
  4. Assemble Taco Bites: Arrange 50 scoop chips on a large platter. Place ½ teaspoon of the cooked taco meat onto each chip.
  5. Add Sour Cream: Pipe a small amount of sour cream over the taco meat on each chip using the prepared sandwich bag.
  6. Add Lettuce and Cheese: Sprinkle shredded lettuce over each bite, followed by a little shredded cheddar cheese.
  7. Top with Tomato: Finish each bite by placing half a cherry tomato on top for a fresh, colorful garnish.

Notes

  • Use scoop chips for easy serving and to hold all the toppings securely.
  • If preferred, substitute iceberg lettuce with shredded romaine for a different crunch.
  • Sour cream can be replaced with Greek yogurt for a healthier option.
  • Make the taco meat ahead of time to simplify assembly during parties.
  • Keep assembled bites chilled until serving to maintain freshness.
