Sweet Potato Rounds

  • 3 large sweet potatoes
  • 3 tablespoons olive oil

  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

  • 1/3 cup crumbled feta cheese

Instructions

  1. Preheat the oven: Set your oven to 425°F to prepare for roasting the sweet potato rounds.
  2. Prepare the sweet potatoes: Wash and dry the sweet potatoes thoroughly. Slice them into ⅓-inch thick rounds for even roasting.
  3. Coat the sweet potatoes: Drizzle olive oil on a large rimmed sheet tray. Add the sweet potato slices and toss them to coat evenly. Use two trays if needed to keep the slices from touching, allowing for crisping.
  4. Season the potatoes: Sprinkle cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper over the slices. Drizzle the tablespoon of honey and toss again to evenly distribute the seasoning.
  5. Roast the potatoes: Place the trays in the oven and bake for 20 minutes. Flip the slices to the other side and bake for an additional 25 minutes, or until the edges are golden and crispy.
  6. Finish and serve: Transfer the roasted potatoes to a serving platter, season with a little more salt, and drizzle additional honey over the top. Sprinkle with crumbled feta cheese and finish with chopped fresh chives or parsley. Serve warm.
