Pumpkin Cream Cheese Mixture

  • 1 lb. cream cheese
  • 15 oz. pumpkin puree
  • 3/4 cup powdered sugar

Whipped Cream

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon powdered gelatin (Knox)
  • 2 tablespoons cold water

Other Ingredients

  • 3 cups strongly brewed coffee
  • 2 packages 14 oz. ladyfingers (40 pieces total)
  • Chocolate shavings & pumpkin spice, for garnish


Instructions

  1. Prepare Pumpkin Cream Cheese: In a medium bowl, whisk together cream cheese, powdered sugar, pumpkin spice, and pumpkin puree using a hand mixer until smooth and well combined. Set aside.
  2. Whip Cream and Prepare Gelatin: In another bowl, whisk heavy cream, powdered sugar, vanilla extract, and salt with a hand mixer until it begins to thicken. Meanwhile, combine gelatin with cold water in a small bowl, microwave for 10 seconds, then stir until dissolved.
  3. Incorporate Gelatin: Add the dissolved gelatin to the thickening whipped cream and continue whisking until soft peaks form and the whipped cream holds its shape.
  4. Soak Ladyfingers: Fully submerge each ladyfinger briefly in the strongly brewed coffee and use them to evenly line the bottom of a 9 x 13 inch pan.
  5. Layer Ingredients: Spread half of the pumpkin cream cheese mixture evenly over the soaked ladyfingers, then top with half of the whipped cream. Repeat by layering the remaining ladyfingers, pumpkin cream cheese mixture, and whipped cream on top.
  6. Chill: Refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set.
  7. Garnish and Serve: Before serving, garnish with pumpkin spice and chocolate shavings. Cut into portions and enjoy.
