Instructions

  1. Prepare surface: Lightly spray a baking sheet or line it with parchment paper or non-stick aluminum foil to prevent sticking when dropping the candy mixture.
  2. Measure corn flakes: Set aside 5 cups of corn flakes for easy addition later.
  3. Heat syrup and sugar: In a small saucepan over medium-low heat, combine 1 cup corn syrup and 1 cup granulated sugar. Stir until the sugar has completely melted into the syrup.
  4. Add peanut butter and vanilla: Stir in 1 cup peanut butter and 1 teaspoon vanilla (if using) into the melted syrup mixture, continuing to stir until the peanut butter is fully melted and smooth.
  5. Remove from heat and mix in corn flakes: Turn off the heat but leave the saucepan on the burner, then quickly add the corn flakes and stir promptly to coat them evenly before the mixture cools and thickens.
  6. Form candy pieces: Lightly coat two spoons or a cookie scoop with baking spray to prevent sticking, then drop spoonfuls of the mixture onto the prepared baking sheet to form individual candies.
  7. Cool and store: Allow the candy drops to cool completely so they set properly. Store in an airtight container between sheets of plastic wrap, wax paper, or parchment paper.
