Ingredients
Scale
Pastry
- 1 sheet puff pastry thawed
Filling
- 4 –5 medium peaches sliced ⅓ inch thick
- 2 teaspoons cinnamon
- ⅓ cup brown sugar
- 1 Tablespoon cornstarch
- 1/4 cup unsalted butter melted
Topping
- 1 large egg whisked
- 2 Tablespoons coarse granulated sugar
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C) to prepare for baking the galette.
- Prepare pastry base: Roll out the thawed puff pastry sheet just enough to fit the bottom of a 10-inch oven-safe skillet. Gently press it into the base and slightly up the sides, then refrigerate while you prepare the filling.
- Mix seasoning: In a small bowl, combine cinnamon, brown sugar, and cornstarch until well mixed.
- Sprinkle base: Evenly sprinkle half of the cinnamon-sugar-cornstarch mixture over the puff pastry base to create a spiced foundation for the peaches.
- Arrange peaches: Arrange the sliced peaches over the spiced pastry base in overlapping circles or rows, evenly covering the surface.
- Add topping and fold crust: Sprinkle the remaining cinnamon mixture evenly over the peach slices. Then fold the edges of the puff pastry slightly over the filling to form a rustic, free-form border.
- Apply egg wash and sugar: Brush the exposed pastry crust edges with the whisked egg and sprinkle the coarse granulated sugar over it for a golden, crunchy finish.
- Drizzle butter: Drizzle the melted unsalted butter evenly over the peach filling to add richness and enhance browning.
- Bake galette: Place the skillet in the oven and bake for 35 minutes or until the pastry crust is golden brown and the peaches are bubbling.
- Cool and serve: Let the galette cool in the skillet for 10 to 15 minutes before slicing. Serve warm with ice cream or whipped cream if desired.
Notes
- Use ripe but firm peaches for best texture and flavor.
- If fresh peaches are not available, thawed frozen peaches can be used, but drain excess liquid first.
- Refrigerate puff pastry until ready to use to prevent it from becoming too soft.
- Butter drizzle helps caramelize the peaches; use unsalted to control saltiness.
- This galette can also be baked on a baking sheet if you don’t have an oven-safe skillet.
- Letting the galette cool slightly prevents burning your mouth and helps the filling set.
