Kielbasa Bites

  • 2 rings (13.9 ounces each) kielbasa

Mustard Glaze

  • ¼ cup (62 g) coarse ground Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons light brown sugar
  • 1 teaspoon Worcestershire sauce

Dipping Sauce

  • 2 tablespoons mayonnaise

Garnish

  • parsley, chopped


Instructions

  1. Slice the Kielbasa: Place the kielbasa rings between two chopsticks or skewers to prevent cutting all the way through. Using a sharp knife, slice the kielbasa downward into ¼-inch thick slices, stopping at the chopsticks to create hasselback-style cuts.
  2. Cut into Bites: Slice the sausage crosswise into 1-inch bite-sized pieces (about 3 slices per piece), yielding approximately 20 bites per ring or 40 bites total for both rings. Place the bites in a large bowl or on a baking sheet.
  3. Mix Mustard Glaze: In a small bowl, combine the Dijon mustard, apple cider vinegar, brown sugar, and Worcestershire sauce. Divide this mixture evenly into two separate bowls.
  4. Prepare Dipping Sauce: To one bowl of the mustard mixture, add the mayonnaise and stir well to combine. Cover and refrigerate this dipping sauce while you prepare the bites.
  5. Coat the Kielbasa Bites: Pour or brush about half of the remaining mustard glaze (without mayonnaise) over the Kielbasa bites, making sure to get the glaze into all the hasselback cuts. Reserve the other half of the glaze for after cooking.
  6. Air Fry the Bites: Arrange the Kielbasa bites in a single layer in the basket of your air fryer, working in batches if necessary. Air fry at 400°F for 9 minutes, shaking the basket halfway through to ensure even browning.
  7. Finish and Serve: Remove the bites from the air fryer and place them on a serving platter. Pour or brush the remaining mustard glaze over the Kielbasa bites. Garnish with chopped parsley if desired and serve warm alongside the chilled mayonnaise dipping sauce. Enjoy!
