Description

A classic homemade English toffee recipe featuring a rich buttery base, a smooth layer of melted semi-sweet chocolate, and a crunchy topping of chopped almonds or pecans. Perfectly sweet and crunchy, this toffee is an irresistible treat to share or enjoy as a decadent snack.

Ingredients

Scale

Toffee Base

  • 2 cups butter
  • 2 cups sugar
  • 1/4 tsp salt

Topping

  • 2 cups semi-sweet chocolate chips
  • 1 cup almonds or pecans, finely chopped

Instructions

  1. Prepare Toffee Mixture: Combine the butter, sugar, and salt in a large heavy saucepan. Cook over medium heat, stirring constantly until the mixture comes to a steady boil.
  2. Cook to Hard Crack Stage: Continue stirring and cooking the mixture until it reaches 290 degrees Fahrenheit on a candy thermometer or turns a dark amber color. To test without a thermometer, drop a small bit into ice cold water; if it turns hard and brittle, it is done.
  3. Pour Toffee: Carefully pour the hot toffee mixture into a foil-lined baking sheet, spreading it evenly. Let it harden for one to two minutes.
  4. Add Chocolate: Sprinkle the semi-sweet chocolate chips evenly over the hot toffee. Let the chocolate melt for about a minute, then spread it evenly using a knife or spatula.
  5. Add Nuts: Sprinkle the finely chopped almonds or pecans on top of the melted chocolate. Gently press the nuts down slightly to help them adhere.
  6. Cool and Break: Allow the toffee to cool completely and harden at room temperature. Once hardened, break the toffee into pieces and store in an airtight container.

Notes

  • Use a candy thermometer for the most accurate results to avoid under or overcooking the toffee.
  • For a nut-free version, skip the nuts or substitute with toasted coconut flakes.
  • Line the baking sheet with heavy-duty aluminum foil for easy removal and cleanup.
  • Store the toffee in an airtight container at room temperature to maintain crispness.
  • Be careful when working with hot sugar mixture as it can cause severe burns.
