Description

This Dump-and-Bake Chicken Tzatziki Rice is an easy one-dish meal combining tender baked chicken, fluffy rice, and a refreshing homemade tzatziki sauce. Seasoned with garlic, fresh dill, and lemon, it’s perfect for a flavorful and comforting dinner with minimal cleanup.

Ingredients

Scale

Chicken and Rice

  • 1.5 lbs chicken breasts or thighs
  • 3 cups chicken broth
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat your oven to 375°F and grease a casserole dish to prevent sticking.
  2. Assemble chicken and rice: Spread the rice evenly in the casserole dish. Place the chicken breasts or thighs on top and season everything with salt and pepper.
  3. Prepare tzatziki sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Stir until smooth and well blended.
  4. Add toppings and broth: Spoon the tzatziki mixture over the chicken pieces in the casserole. Pour the chicken broth over the entire dish, then cover tightly with foil.
  5. Bake the dish: Place the covered casserole in the oven and bake for 50 minutes, or until the chicken is fully cooked and the rice is tender and fluffy.
  6. Serve and enjoy: Carefully remove from the oven, let it rest for a few minutes, then serve warm for a delicious and simple meal.

Notes

  • Use brown rice instead of white rice for added fiber and a nuttier flavor.
  • Add diced zucchini or other vegetables to the casserole for extra nutrition and variety.
  • If you prefer, you can use chicken thighs for more juicy and flavorful meat.
  • Make sure to cover the casserole tightly with foil to prevent the rice from drying out during baking.
  • For a spicier tzatziki, add a pinch of crushed red pepper or cayenne powder to the sauce.
