Description

Shrimp Paste

  • 1 lb. shrimp, defrosted, shelled and deveined
  • 1 egg white, lightly beaten
  • 1 teaspoon salt or fish sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon sesame oil
  • 1 tablespoon oil or pork fat
  • 3 dashes white pepper powder

Coating and Frying

  • 8 pieces spring roll wrapper, 8-inch square
  • Oil for deep-frying (enough to submerge shrimp balls)


Instructions

  1. Prepare shrimp paste: In a mini food processor, combine shrimp, egg white, salt or fish sauce, sugar, cornstarch, sesame oil, oil, and white pepper powder. Blend until the mixture forms a smooth and sticky shrimp paste.
  2. Cut spring roll wrappers: Fold the spring roll wrappers and use scissors to cut them into thin strips. Then cut those strips into shorter lengths. Lay the strips flat on a surface.
  3. Shape shrimp balls: Wet your hands to prevent sticking and shape the shrimp paste into balls, about 1 tablespoon each in size.
  4. Coat shrimp balls: Roll each shrimp ball in the spring roll strips ensuring the strips stick evenly. Trim any excess strips with scissors and reuse leftover strips if necessary.
  5. Deep fry shrimp balls: Heat enough oil in a deep fryer or wok. Deep-fry the shrimp balls until golden brown, about 5 minutes, turning as needed for even cooking.
  6. Drain and serve: Remove fried shrimp balls from oil, drain on paper towels, and serve hot with Thai sweet chili sauce or your favorite chili sauce.

Notes

  • Use chilled shrimp for easier blending and better texture.
  • Spring roll wrapper strips should be thin for a crispy coating.
