Instructions

  1. Brown the Sausage: In a large skillet over medium heat, heat olive oil. Add sliced smoked sausage and sauté until browned on all sides, about 5-7 minutes. Remove sausage from the pan and set aside.
  2. Sauté Vegetables: Add diced onion, green bell pepper, and red bell pepper to the same skillet. Sprinkle with veggie seasoning blend, salt, and pepper. Cook for 5 minutes or until vegetables soften and become fragrant.
  3. Add Garlic: Stir in minced garlic and cook for another 1 minute to release its aroma without burning.
  4. Create Sauce Base: Pour in chicken broth and heavy cream. Add the Boursin cheese and stir continuously until the cheese fully melts and the sauce becomes creamy and smooth.
  5. Cook Tortellini: Add frozen cheese tortellini to the skillet. Bring the mixture to a boil, then cover with a lid, reduce heat to low, and let simmer for 10 minutes until tortellini is cooked through.
  6. Finish the Dish: Uncover the skillet and stir in shaved or grated Parmesan cheese and red pepper flakes if using. Return the browned smoked sausage to the pan.
