Instructions
- Cook the Chicken: Heat the olive oil in a large, deep pan over medium heat. Add the butter and melt it until foaming. Add the diced chicken breast and cook for 5 minutes until golden and cooked through.
- Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, taking care not to burn it.
- Deglaze with Wine: Pour in the dry white wine and cook for 2 minutes, allowing the alcohol to mostly evaporate and the flavors to concentrate.
- Add Seasonings and Stock: Stir in the Italian seasoning mix and chicken stock. Bring the mixture to a gentle simmer.
- Add Cream Cheese: When the stock is gently bubbling, add the cream cheese. Break it down with a spoon and stir continuously until the sauce is smooth and creamy.
- Cook Gnocchi and Spinach: Add the gnocchi and shredded baby spinach to the pan. Cover with a lid and cook for 5 minutes until the gnocchi is tender and the spinach is wilted.
- Finish and Serve: Turn off the heat. Stir in the grated Parmesan and season with freshly ground black pepper and salt to taste. Serve immediately for best flavor.
