Description

  • 1/3 cup sliced green onions
  • 1 tablespoon sugar (optional)


Instructions

  1. Prepare the filling. In a medium-sized bowl, beat the softened cream cheese with a hand mixer or mix by hand until smooth and creamy. Add dried cranberries, crumbled feta cheese, sliced green onions, and sugar if using. Stir all ingredients well to combine evenly.
  2. Assemble the pinwheels. Lay out each 8-inch tortilla flat. Spread approximately 1/4 cup of the cream cheese mixture evenly over each tortilla, leaving about a one-inch border around the edges to prevent overflow during rolling.
  3. Roll and chill. Tightly roll each tortilla from one edge to the other into a log shape. Wrap each rolled tortilla securely in plastic wrap to hold its shape. Refrigerate the wrapped rolls for at least one hour, or up to 24 hours, to allow the filling to set and flavor to meld.
  4. Slice and serve. When ready to serve, remove the plastic wrap from the tortillas. Using a serrated knife, cut the rolls into one-inch thick slices to create pinwheels. Arrange on a serving platter and enjoy.
