Instructions
- Prepare the dates: Use a small sharp knife to cut a slit lengthwise in each Medjool date and carefully remove the pits.
- Stuff the dates: Fill each date with 1 teaspoon of peanut butter and sprinkle 1 teaspoon of crushed roasted peanuts on top. Set them aside.
- Melt the chocolate: Place the chocolate chunks in a microwave-safe bowl and heat in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
- Coat the dates: Insert a toothpick into each stuffed date, dip it into the melted chocolate, and use a spoon to ensure the date is fully coated. Let any excess chocolate drip off.
