Description

Delicious and easy-to-make Peanut Butter Pretzel Bites featuring a creamy peanut butter filling sandwiched between mini twist pretzels, dipped in rich dark chocolate, and optionally garnished with sea salt.   • ½ cup creamy peanut butter
  • 3 tbsp salted butter, softened
  • 2 tbsp granulated white sugar
  • ½ tsp salt
  • ¾ cup powdered sugar

Pretzels

  • 72 mini twist pretzels

Chocolate Coating

  • ¾ cup dark chocolate chips
  • Sea salt, optional garnish


Instructions

  1. Prepare the Dough: Use a stand or hand mixer to beat the creamy peanut butter, salted butter, granulated white sugar, and salt together in a medium sized mixing bowl until fully combined.
  2. Add Powdered Sugar: Gradually beat in the powdered sugar on a low setting until you have a soft dough.
  3. Line Sheet Pan: Set out a large sheet pan that will fit in your freezer and line it with parchment paper.
  4. Form Sandwiches: Scoop out ½ tablespoon of the peanut butter mixture and roll it into a ball. Use two pretzels to create a sandwich with the peanut butter ball and gently press the pretzels towards each other until you create a ½ inch thick sandwich. Repeat with the remaining peanut butter dough to make about 36 sandwiches.
  5. Freeze Sandwiches: Place all 36 sandwiches on the prepared sheet pan and freeze for 30 minutes to set. You can also refrigerate if preferred.
  6. Melt Chocolate: Place the dark chocolate chips in a microwave-safe bowl and microwave them in 15-second increments, stirring in between, until fully melted, approximately 2-3 minutes total.
  7. Dip Sandwiches: Dip each peanut butter pretzel sandwich halfway into the melted chocolate, then place them back on the parchment paper. Sprinkle with sea salt if desired.
  8. Set Chocolate: Return the sheet pan to the freezer for 15 minutes to allow the chocolate to harden and set.
  9. Serve or Store: Serve immediately chilled or store the bites in the refrigerator until ready to serve.

  • Store the pretzel bites in an airtight container in the refrigerator for 1-2 weeks.
  • Freeze in a freezer-safe container for up to 3 months; serve frozen or thaw in the refrigerator before serving.
