- 1 1/4 cup shredded mozzarella cheese
- 1/4 cup shaved Parmesan cheese
- 1 tsp dried parsley or fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit and lightly spray a 9×5 or 8×8 inch baking dish with cooking spray. Set aside for later use.
- Slice Zucchini: Using a mandolin slicer or a large chef’s knife, slice the zucchini lengthwise into ⅛-inch thick slices, aiming to get about 12 slices in total.
- Assemble Roll Ups: Place shredded chicken evenly over each zucchini slice, then spread 1 tablespoon of Alfredo sauce on top of the chicken. Carefully roll each slice tightly and arrange the roll ups seam side down in the prepared baking dish.
- Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the zucchini roll ups, then sprinkle shredded mozzarella cheese and shaved Parmesan cheese on top.
- Bake: Place the baking dish in the oven and bake for 25 minutes, or until the sauce is bubbly and the zucchini is fully cooked and tender.
- Garnish and Rest: Remove from oven and sprinkle with dried or fresh parsley. Allow the dish to rest for 10 minutes before serving to set and cool slightly.
