Description

  • 1 large thick zucchini
  • 2 cups shredded chicken (rotisserie works great)
  • 2 cups Alfredo sauce (homemade or store bought)
  • 1 1/4 cup shredded mozzarella cheese
  • 1/4 cup shaved Parmesan cheese
  • 1 tsp dried parsley or fresh parsley


Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit and lightly spray a 9×5 or 8×8 inch baking dish with cooking spray. Set aside for later use.
  2. Slice Zucchini: Using a mandolin slicer or a large chef’s knife, slice the zucchini lengthwise into ⅛-inch thick slices, aiming to get about 12 slices in total.
  3. Assemble Roll Ups: Place shredded chicken evenly over each zucchini slice, then spread 1 tablespoon of Alfredo sauce on top of the chicken. Carefully roll each slice tightly and arrange the roll ups seam side down in the prepared baking dish.
  4. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the zucchini roll ups, then sprinkle shredded mozzarella cheese and shaved Parmesan cheese on top.
  5. Bake: Place the baking dish in the oven and bake for 25 minutes, or until the sauce is bubbly and the zucchini is fully cooked and tender.
  6. Garnish and Rest: Remove from oven and sprinkle with dried or fresh parsley. Allow the dish to rest for 10 minutes before serving to set and cool slightly.
