Strawberry Glaze Ingredients

  • 1 lb. fresh strawberries
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare the strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later use.
  2. Puree the strawberries: Place the remaining half of the strawberries in a blender or food processor and blend until fully pureed.
  3. Cook the glaze: Combine the strawberry puree, cornstarch, lemon juice, and sugar in a saucepan. Mix well and heat over medium-high heat until it reaches a gentle boil. Reduce the heat to low-medium and cook until the mixture thickens, which takes a few minutes. Test by dipping a spoon into the glaze; if the back remains coated, it is ready.
  4. Add vanilla extract: Remove the pan from the heat and stir in the vanilla extract until well combined.
  5. Combine with fresh berries: Pour the hot strawberry glaze through a mesh strainer into the bowl containing the reserved fresh berries. Stir until the fresh berries are fully coated with the warm glaze.
  6. Cool and serve: Allow the strawberry glaze mixture to cool to room temperature or chill it before using as a topping.

  • Makes approximately 1.5 cups of strawberry glaze.
