Strawberry Glaze Ingredients
- 1 lb. fresh strawberries
- ¼ cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
Instructions
- Prepare the strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later use.
- Puree the strawberries: Place the remaining half of the strawberries in a blender or food processor and blend until fully pureed.
- Cook the glaze: Combine the strawberry puree, cornstarch, lemon juice, and sugar in a saucepan. Mix well and heat over medium-high heat until it reaches a gentle boil. Reduce the heat to low-medium and cook until the mixture thickens, which takes a few minutes. Test by dipping a spoon into the glaze; if the back remains coated, it is ready.
- Add vanilla extract: Remove the pan from the heat and stir in the vanilla extract until well combined.
- Combine with fresh berries: Pour the hot strawberry glaze through a mesh strainer into the bowl containing the reserved fresh berries. Stir until the fresh berries are fully coated with the warm glaze.
- Cool and serve: Allow the strawberry glaze mixture to cool to room temperature or chill it before using as a topping.
Notes
- Makes approximately 1.5 cups of strawberry glaze.
- Store leftover glaze in an airtight container in the refrigerator for up to 3 to 4 days.
- When ready to use leftovers, gently warm the glaze in 15-second intervals in the microwave until room temperature, or use cold as a topping depending on your preference.
