Description

Cattle Drive Casserole is a hearty, comforting dish featuring a Cheddar Bay biscuit base topped with a flavorful ground beef taco mixture, creamy cheese layers, and melted cheddar cheese. Perfect for a crowd-pleasing dinner with rich, cheesy, and savory flavors.

Ingredients

Units Scale

Biscuit Base

  • 1 box Cheddar Bay biscuit mix
  • 3/4 cup milk

Beef Mixture

  • 1 1/2 lb lean ground beef
  • 1 large onion, diced
  • 1/4 cup water
  • 1 packet taco seasoning
  • 1 can diced tomatoes (usually 14.5 oz)

Cheese and Cream Layers

  • 1 cup Colby jack cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 cups cheddar cheese, shredded
  • 2 tablespoons green onion, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a 9 x 13-inch casserole dish by spraying it with non-stick cooking spray.
  2. Make Biscuit Base: In a mixing bowl, combine the biscuit mix, the enclosed seasoning packet, and milk until well combined. Spread this mixture evenly in the casserole dish and bake for 5 minutes to slightly set.
  3. Cook Beef Mixture: While the biscuit base is baking, brown the ground beef in a large skillet with the diced onion over medium heat, breaking it up as it cooks. Once browned, drain any excess grease. Stir in the diced tomatoes, water, and taco seasoning, mixing everything thoroughly to coat the beef in flavorful spices.
  4. Layer Beef on Biscuit Base: Remove the biscuit base from the oven and spread the beef mixture evenly over it.
  5. Prepare Cheese Mixture: In a separate bowl, mix together the sour cream, mayonnaise, and Colby Jack cheese. Spread this creamy cheese mixture over the beef layer in the casserole dish.
  6. Add Cheddar Topping: Sprinkle the shredded cheddar cheese on top for a melty, cheesy finish.
  7. Bake Casserole: Bake the casserole for about 30 minutes, or until the cheese on top is melted, bubbly, and golden brown.
  8. Cool and Serve: Let the casserole cool for at least 10 minutes before slicing and serving. Garnish with chopped green onions before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter version of the beef mixture.
  • If you prefer spicier food, add diced jalapeños or use spicy taco seasoning.
  • Mayonnaise can be substituted with Greek yogurt for a tangier, lower fat option.
  • The biscuit mix can be replaced with a homemade biscuit dough if preferred.
  • Allowing the casserole to cool helps it set and makes it easier to slice.
  • For added texture, sprinkle crushed tortilla chips on top before baking.
